Healthy Recipes Using Your Overripe Bananas: Part 1

Everyone has experienced that moment when you buy a bunch of yummy bananas from the market, and in the blink of an eye, they are soft and look like they have been in a boxing match.  Nobody likes eating a mushy banana, right?  But wait!  Before you start walking towards that trash can, you might want to take a gander at these recipes that turn those overripe bananas into delicious dishes!

Oatmeal Banana Pancakes

You are probably asking yourself, “Pancakes?  That are healthy?”  Yes, that is right!  These Oatmeal Banana Pancakes are not only easy to make, but they are absolutely delicious.  This recipe by only takes a few minutes of prep.  A little of this batter goes a long way.  Here is what you need:

  • 2 Eggs
  • 1 Banana
  • 1/2c Oats (aka oatmeal. We used long cooking oats)
  • 1/4c Apple Sauce
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon

Once you have all these ingredients, you mix them in a blender and start cooking!  The creator of this recipe emphasizes that you need to butter the pan or else “These WILL STICK. . .”  These pancakes are not only delicious, but also extremely filling.  These will be a leisurely breakfast staple in your house.

Vegan Banana Chocolate Chip Oatmeal Cookies

What if I told you that you can have cookies that won't have you cheating on your diet?  These are those cookies!  3 ingredients!  That is all you need to make this delectable vegan banana chocolate chip oatmeal cookie recipe by!  Here is what you need:

  • 1 cup oats
  • 2 bananas
  • 3 tbsp chocolate chips

The first step in the directions is to mash the overripe bananas, then mix them in a food processor with the cup of oats.  Once those ingredients are blended, you add in the chocolate chips.  After you mix in the chocolate chips, you can add non-dairy milk to add some moisture to the cookie.  When all those ingredients are mixed together, you can now line your baking tray with your cookies!  You can find the full recipe at

Chocolate Almond Butter Overnight Oats

Imagine grabbing a delicious breakfast out of the fridge that is already made for you or your kids to enjoy.  Snackinginsneakers' Chocolate Almond Butter Overnight Oats is that breakfast!  This recipe is not only vegan, but also gluten free!  Here is what you need:

  • 2 ripe bananas
  • 1 cup old fashioned gluten free oats
  • 1½ cups unsweetened almond milk
  • ⅓ cup almond butter
  • 2 tbsp. unsweetened cocoa powder
  • ½ tbsp. hemp seeds
  • ½ cup dark chocolate chips
The instructions are short and simple.  You just mash up the bananas and mix in the rest of the ingredients.  After all your ingredients are mixed, you just have to put it in a mason jar and keep it refrigerator overnight.  In the morning, enjoy the fruits of your labor!  You can find the full recipe and instructions at
