Avocados are kind of the best.  You know it.  We know it.  The world knows it.  It is a universal fact by now.  It is creamy, healthy, nutritious, and delicious!  It is the whole package.  There are some questions that often cross avocado lovers’ minds throughout their life like, “why do people even ask me if I want to add avocado to my meal even if cost extra… the answer is obviously yes!  why would anyone say no?” and “why can’t avocado just be in everything?”  These questions are valid and hopefully will be answered one day.  Until then, avocado will still be $1 extra, and the avocado will continue to become more and more versatile!  Here are creative dishes using avocados that will have you stocking up!

Avocado Pasta

There is something magical about the creamy sauce that goes over pasta.  Now imagine incorporating avocado into that already creamy sauce!  This recipe from damndelicious.net is super easy and takes only about 20 minutes to make!  All you need is:

  • “12 ounces spaghetti
  • 2 ripe avocados, halved, seeded and peeled
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tablespoons freshly squeezed lemon juice
  • Kosher salt and freshly ground black pepper, to taste
  • 1/3 cup olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup canned corn kernels, drained and rinsed”

First, you cook the pasta accordingly, then you can start on the avocado sauce.  Combine the avocados, garlic, basil, lemon juice in a food processor and season with salt and pepper.  Turn on the processor and add in the olive oil as it is mixing.  Once processed, mix the pasta with the avocado sauce, then garnish with corn and cherry tomatoes.

Baked Avocado Fries

This recipe from Refinery29 is the perfect combination of salty and sweet, and is a perfect appetizer or snack.  All you need is

  • 2 Avocados
  • 1/4 tsp of sea salt
  • 3/4 cup of panko bread crumbs
  • 1 egg

Pre-heat your oven to 400 degrees and prepare your baking sheet with foil and cooking spray.  Beat your egg and add a little salt into the mixture.  Pour out the bread crumbs onto a plate or into a large bowl.  Cut the Avocado into about 8 wedges.  Dip the avocado into the beaten egg, then cover in the bread crumbs.  Assemble your wedges into lines on your baking sheet.  Bake for about 20 minutes or until they have browned.  You can dip these delicious fries into ranch or whatever dip you like.

Stuffed Avocado Breakfast

Avocado for breakfast?  Um, yes please!  This breakfast dish from annanimmity.com is delicious and will fill you with protein for the day ahead!  All you need is:

  • “1 Avocado
  • 2 eggs
  • 2 strips cooked bacon, crumbled”

First off, cut the avocado completely in half and remove the pit inside.  Scoop out a good amount of the avocado so your egg can go in there.  Crack and put one egg in each avocado half.  Add the pieces of bacon on top and put in the oven at 425 degrees for about 15 minutes.  You can add cheese, salt, and pepper to this recipe as well!
